NATURALLY RICH WITH PRE & PROBIOTICS THROUGH THE SAKE FERMENTATION PROCESS
In a nutshell, sake-lees is produced by adding 'koji' (Aspergillus oryzae mold) to steam rice and water. The koji releases amylase enzymes, which break down rice starch into sugar. To convert the sugar to alcohol, a yeast known as saccharomyces cerevisiae is added which kicks start the fermentation process. After 20-35 days of fermentation, the rice oturns to a mash which is then pressed to separate the sake from the lees. The solid that remains behind is sake kasu/lees which is packed with all the active nutrients and healthy microbials.
